A famed Middle Eastern favorite, called Ful Mudammas! Usually a breakfast staple food within Arab communities, ful mudammas is made with fava beans and an assortment of fresh veggies and spices in a deliciously hearty dish. Serve with toasted whole wheat pita bread on the side!
Ful Mudammas (Fava Bean Dip)
Ingredients:
2 cans whole fava beans, rinsed
2 cups water
1 small green pepper, diced
1 plum tomato, diced
2 stalks of scallions, sliced
1 tbs olive oil
1 lemon, fresh juice
2 garlic cloves, crushed
1/4 tsp cumin
2 tbs fresh parsely, extra to garnish
Salt to taste
Cracked black pepper to taste
Directions:
- Boil fava beans in 2 cups water. Remove from heat when bubbles.
- Pour beans with water into a ceramic dish and add in veggies, spices, and other ingredients and mix well.
- Garnish with fresh parsley and enjoy!!
