Cucumber Mint Yogurt Sauce

This dressing is a must try with its simple recipe and cool refreshing flavor. I grew up eating this yogurt sauce commonly paired with Middle Eastern maqluba. Maqluba is a traditional dish of Jordan and Palestine that includes meat, rice and fried vegetables. It’s also great with biryani, and certain salads, sandwiches and wraps. Light, delicious, and fresh!

Cucumber Mint Yogurt Sauce

Ingredients:

1 large cucumber, washed and cut into large cubes (keep skin on)
1 cup low-fat plain yogurt
1 tbs dried and crushed mint leaves
6-8 fresh mint leaves
Sea salt to taste
Cracked black pepper to taste

Directions:

  1. Combine all ingredients in a food processor, except the salt and pepper. Blend.
  2. Add salt and pepper slowly and moderate to your desired liking. Mix well. Add to serving dish and serve alongside your meal. Enjoy!
