Coconut Chia Pudding

I started using chia seeds in my diet because they are a wonderfully versatile super food. They contain high levels of quality protein, omega-3 fatty acids, (among other vitamins and minerals) as well as are loaded with antioxidants as well as fiber. Chia seeds are 40% fiber by weight, allowing them to be one of the best food sources of fiber in the world! Even when eaten raw, (by being put in smoothies, rice dishes etc) chia seeds can absorb the water in your stomach and expand, thus increasing fullness, slowing the absorption of your food, and allowing you to eat fewer calories. When combined with milk (whether the almond variety or coconut etc) they absorb up to 10 times their weight creating a gel-like consistency, or pudding. I’ve used chia seeds to create this simple recipe for delicious coconut pudding below!

Coconut Chia Pudding


2 cups light vanilla coconut milk, unsweetened
1/3 cup chia seeds
2 tbs organic honey
Fresh fruit and granola to garnish


  1. Combine all ingredients (except fruit and granola) in a mixing bowl and whisk well.
  2. Put bowl into fridge for 1 hr (can keep for longer if you want a thicker consistency).
  3. Remove from fridge and whisk again. Garnish with fresh fruits, granola, nuts, coconut flakes etc. Enjoy!
