Have those mornings when you wake up feeling nauseous and don’t want to eat anything? Fight it! Always make sure you get in that nutritious breakfast. I made this Kale Apple and Ginger smoothie when I was having one of those mornings. According to the University of Maryland Medical Center, studies indicated that ginger can reduce the severity and duration of different forms of nausea. It’s a light smoothie with a coconut milk base, it’s filled with nutritious goodies, and it’s naturally sweetened with some homemade blueberry compote with organic honey. Instead, you can use fresh blueberries and add in a bit of honey straight into the smoothie. I had some leftover compote in my fridge from baking the previous day and decided to use that instead.
Kale, Apple & Ginger Smoothie
Ingredients:
2.5 cups unsweetened coconut milk
2 cups kale
1/2 inch by 1/2 inch piece of fresh ginger
1/2 cup blueberries
1 small apple of your choice, extra for slices to garnish
dried crushed mint leaves
drizzle of honey *optional*
Directions:
- Combine all ingredients in a blender and bled until everything is thoroughly pulsed.
- Garnish with some fresh apple slices and a sprinkle of dried, crushed mint leaves. Enjoy!
