Cilantro Honey & Ginger Vinaigrette

One of my favorite spring and summertime dressings. I love combining this dressing with salads that have fresh greens in them and fruits. Whenever I make a salad to go with this vinaigrette I keep it simple with fresh greens (spinach, kale, lettuce, arugula etc), fruit (strawberries, blueberries, papaya etc), and healthy fats (slivered almonds, pecans, walnuts etc). Choose one of each or combine for more variety!

Cilantro Honey & Ginger Vinaigrette

Ingredients:
1/2 cup white vinegar
1/4 cup olive oil
2 tbsp finely chopped cilantro
2 tbsp honey
2 small garlic cloves
1/2-inch cube fresh ginger
Juice from 1 small lime
1/4 tsp salt
1/2 in. piece green chili pepper *optional*

Directions:
1. Crush garlic, ginger, and green chili together with a mortar and pestle, or mince. Add the olive oil to that and mix well. Let sit for 15 minutes.
2. Combine the rest of the ingredients with the olive oil mixture. Mix together well.
3. Serve over your salad and enjoy!
