This super easy to make Spinach & Garbanzo Bean Salad was made with a lemon garlic tahini dressing. Dark leafy greens, like spinach, provide vast health benefits that are important for skin, hair, and bone health. They’re loaded with nutrients and low in calories. I threw in little bites of dried cranberries for a touch of added sweetness. It paired wonderfully with the crisp spinach and smooth garbanzo beans. You can add a protein like rotisserie turkey or chicken to create more of a hearty meal.
Spinach & Garbanzo Bean Salad
3 cups fresh spinach, chopped
1, 15 oz. can garbanzo beans, drained & rinsed
2 tbs tahini
1/2 tbs – 1 tbs tbs olive oil
Juice of 1 medium sized lemon
1 small garlic clove, crushed
1 persian cucumber, diced
2 stalks scallions, sliced
1/4 cup dried cranberries
1 tsp zaatar
Salt to taste
1. Combine spinach, garbanzo beans, cucumbers, dried cranberries, and scallions in a bowl.
2. Combine tahini, lemon juice, garlic and olive oil and whisk together well.
3. Pour dressing over salad and mix until dressing is uniform throughout.
4. Sprinkle zataar on top and a pinch of salt to taste. Mix and enjoy!
