Sun-Dried Tomato Pesto

Sun-dried tomatoes are richly flavored gems that provide loads of flavor and depth to any dish. They provide vitamin C, which helps stimulate the production of other antioxidants within the body as well as boosting immune function. Sun-dried tomatoes also provide protein, as well as fiber which aids with digestive health and allows you to feel fuller for a longer period of time. Lycopene, an antioxidant, is more readily available at higher concentrations in sun-dried tomatoes than raw tomatoes. Lycopene in tomatoes may aid in the prevention of prostate, rectal, colon, and certain stomach cancers. Among the traditional ingredients found in pesto, this spread contains kale for added nutrients found in dark leafy greens. This pesto is a great addition to a slice of whole grain toast or to pastas, salads or seasoning for meats or roasted vegetables. Store any leftovers in a covered container in the fridge for later use.

Sun-Dried Tomato Pesto


⅓ cup sun-dried tomatoes
¼ cup baby kale, packed
2 tbs fresh basil, chopped
½ tbs fresh oregano, chopped
2 garlic cloves
¼ cup pine nuts
⅓ cup olive oil
3 tbs balsamic vinegar
⅓ cup tomatoes, crushed
½ tbs tomato paste
1 small onion, chopped
⅓ cup grated parmesan cheese
salt to taste


  1. Allow the sundried tomatoes to soak in warm water for about 5 minutes to get them tender. When finished pour out the water.
  2. Add sundried tomatoes and the rest of the ingredients into a food processor and blend well until all ingredients are mixed thoroughly. Add minimal salt to taste.
  3. Serve, and enjoy!
