Homemade Guacamole

Ripe avocado mashed and mixed with an assortment of veggies, fresh cilantro, lime juice and a few seasonings makes for a delicious dip or condiment. This guacamole can be added to your quesadillas, burritos, burrito bowls, or just used as a dip for tortilla chips. Avocados make up the base of guacamole and are loaded with essential healthy fats that, when eaten in moderation, can help lower “bad” cholesterol. Avocados are also packed with fiber which aids in digestive health. Fiber also allows you to keep from overeating by making you feel fuller for a longer period of time. Avocados are also a good source of B vitamins which have many roles, including protecting your body from disease and infection.

Homemade Guacamole

Ingredients:

2 ripe avocados, peeled and mashed
Juice from 1 lime
½ tbs olive oil
1 garlic clove, crushed
1 green pepper, diced
1 small to medium sized red onion, diced
1 tomato, diced
1 tsp jalapeno, diced (more or less, depending on your preferred spice level)
3 tbs fresh cilantro, chopped
¼ tsp chili powder
¼ tsp ground cumin
Sea salt to taste
Cracked black pepper to taste

Directions:

  1. Mash avocados with the back of a fork. After you’ve mashed the avocados to your preferred consistency, combine that with juice from the lime, olive oil, and garlic. Mix together well.
  2. Next combine in green pepper, red onion, tomato, jalapeno, cilantro, chili powder, and cumin with the mashed avocados and mix well.
  3. Carefully add sea salt and cracked black pepper and taste. If more of either is needed, add in small increments.
  4. Garnish with fresh cilantro, server, and enjoy!
