Berry Bulgur Salad

Bulgur is a kind of dried cracked wheat. It’s a common ingredient in Middle Eastern cooking. It’s a whole wheat product so it contains high amounts of fiber as well as is a good source of protein, iron, and vitamin B6. Berries contain ample amounts of antioxidants. Antioxidants help our bodies fight against free radicals which can damage our cells. Damage to our cells can damage our skin and cause early wrinkling to occur. Antioxidants protect our cells and bodies, allowing our organs to function properly, protecting us from mutations that can lead to cancer. Berries are also high in fiber, which can aid our digestive systems to function properly, as well as allow us to feel fuller for a longer period of time. This salad is a quick easy go-to option, light, refreshing and tasty, even as a dessert!

Berry Bulgur Salad

Ingredients:

½ cup bulgur
1 cup strawberries, sliced
½ cup blueberries
½ cup raspberries
½ cup blackberries
1 tbs fresh mint leaves, chopped
Juice from ½ medium sized lemon
½ tbsp honey

Directions:

  1. Cook the bulgur. Bring 1 cup of water to a boil. Remove from the heat, and stir in ½ cup of uncooked bulgur wheat and add a pinch of salt. Cover and let stand (without putting back on heat) for 20 minutes. Drain any excess liquid (by squeezing out, or adding to a strainer) and fluff.
  2. Combine all fruits in a serving bowl, add bulgur. Add chopped mint leaves.
  3. In a small bowl add fresh lemon juice and honey and mix until thoroughly combined.
  4. Add lemon honey dressing to salad. Serve and enjoy!
