This is a go-to salad when paired with a spicy meal. It’s refreshing, cool, and minty. It loaded with vegetables. All the vegetables in this salad have a high fluid-content. This is important especially if drinking adequate amounts of water daily is something that your struggle with. The recommended daily intake of water is eight 8 oz. glasses or half a gallon. Often-times we can replenish our water intake with fruits and vegetables that have a high water content. We can get up to 20% of our recommended water intake with high fluid foods so it important to aim to incorporate them in our daily diets.
Cucumber Tomato Salad with Mint Yogurt Dressing
Ingredients:
5 persian cucumbers, diced
3 plum tomatoes, diced
2 green peppers, diced
2 red onions, diced
Dressing:
½ cup plain low-fat yogurt
2 tbsp olive oil
Juice from 1 small lemon
1 garlic clove, crushed
¼ cup mint leaves, minced
Salt & cracked black pepper to taste
Directions:
- Combine all diced vegetables in a bowl. In a separate bowl, combine all dressing ingredients and mix well. Right before you are ready to serve, pour dressing over vegetables, mix well.
- Serve and enjoy!
