Cilantro & Lime Avocado Salad

This has always been one of my favorite go-to salads to make. Its combination of simple fresh ingredients in a zesty dressing making every bite a perfect one. You have the creaminess from the avocados, the bite and crunch from the crisp vegetables like cucumbers and peppers, fresh herbs, and the natural sweetness from the corn and tomatoes. Not to mention, this is a fiber rich salad that is sure to satisfy. It’s loaded with nutrients, healthy omega-3 fats, and a low-calorie dressing that feels as bright as the summer sun. Salads are a surefire way to get in a portion, or even all, of your daily requirement of vegetable intake. Moderately active women and moderately active men (depending on age) should get between 2 ½ to 2 cups daily and 3 to 2 ½ cups daily of vegetables. Also, it is always important to diversify your vegetable intake. Aim to eat vegetables from all different vegetable groups, from dark leafy greens, red and orange veggies, beans and peas, starchy veggies, onions, squash, green beans, cucumbers etc. The options cease to end! Healthy habits begin with you.

Cilantro & Lime Avocado Salad


2 avocados, diced
1, 15 oz can loose corn, drained and rinsed
1, 15 oz can black beans, drained and rinsed
2 persian cucumbers, diced
1 green pepper, diced
1 red pepper, diced
1 cup cherry tomatoes, halved or fourthed
1 red onion, diced
3 tbsp fresh cilantro, finely chopped
Salt to taste
Cracked black pepper to taste

2 cloves garlic, crushed
1½ tbsp olive oil
Juice from 1 fresh medium sized lime
1 tbsp white vinegar
½ tsp chili powder
1 tsp cumin
½ tsp paprika
red chili flakes for heat *optional*


  1. Combine all ingredients (except dressing ingredients) in a large bowl. In a separate smaller bowl combine dressing ingredients until well mixed. Pour dressing over salad right before serving and mix well. Add salt and pepper to taste.
  2. Serve and enjoy!
