Tahini Lemon Sauce

Tahini is a paste or condiment made of toasted sesame seeds that is common in Middle Eastern cooking. It can be served on its own or used as an ingredient in certain dishes like hummus and baba ghanoush. Tahini is rich in minerals including phosphorus, lecithin, magnesium, potassium and iron. It is one of the highest protein sources for most nuts and contains high levels of calcium. It helps maintain healthy skin and muscle tone and is a good source of healthy fats. It is versatile enough to be used in both savory and sweet dishes. This particular recipes is great as a dip, a drizzle, or addition or many sandwiches. Pour over Garlicky Bok Choy as seen in the picture. Get creative and see where you can use tahini in different, yet tasteful ways.

Tahini Lemon Sauce

Ingredients:

¼ cup well stirred tahini
¼ cup olive oil
⅓ cup fresh lemon juice
Salt to taste
Water to dilute
1 tbsp minced fresh herb, if desired

Directions:

  1. Combine all ingredients in a small bowl and mix well. If too thick, add water (one tablespoon at a time) and adjust with salt to taste. Drizzle over sautéed vegetables, use as a salad dressing, or a spread in sandwiches, burgers etc. Add minced parsley, dill, or cilantro if desired. Enjoy!
