This salad is popular in Middle Eastern cuisine. The base is quite simple with lettuce, tomatoes, cucumbers, green peppers but what makes it unique is the dressing and addition of crisp pita bread. A great way to get in more nutrient-dense greens is to replace the lettuce with dark leafy greens like spinach or kale. The pita bread in this salad is traditionally fried but to cut down on added oils they were lightly drizzled and toasted in a toaster oven. You can also replace the white flour pita bread with a whole wheat variety for added fiber and nutrients. This salad is also hydrating, with plenty of vegetables that are high in fluids. High fluid foods in the diet are a great way to ensure you are getting enough water daily if drinking the recommended 8 glasses of water a day seems daunting. Aim to make changes in your diet that will lead to a healthier lifestyle. This salad, with its tart and zesty sumac dressing, is one you’ll remember.

Fattoush Salad

Ingredients:

½ head lettuce, chopped (or replace with spinach, kale etc equivalent)
¼ cup flat leaf parsley, finely chopped
¼ cup mint leaves, finely chopped
4 stalks green onion, finely sliced
2 cups heirloom tomatoes, halved or fourthed (can use cherry or grape tomato varieties)
3 persian cucumbers, diced
1 red onion, finely sliced
2 green peppers, diced
1 cup radish, diced

2 whole wheat pita breads, cut into bite-sized pieces
Olive oil for drizzle
Salt to taste
Cracked black pepper to taste

Sumac dressing:
¼ cup olive oil
2 tbs pomegranate molasses
2 tsp ground sumac
1 tsp dried mint leaves
1 small lemon, juice and ½ zest
½ tbsp vinegar

Directions:

  1. Cut pita bread into bite sized pieces, drizzle with olive oil, a pinch of salt and mix well. Add to a tray in a toaster oven and allow to slightly brown. Set aside when done.
  2. Add lettuce, parsley, mint, green onion, tomato, cucumber, red onion, green pepper, radish, to a large bowl.
  3. In a separate smaller bowl add dressing ingredients and mix together well. Pour dressing over vegetables, add toasted pita bread bites, salt and pepper to taste. Mix well.
  4. Serve and enjoy!
