Blackened Shrimp Tacos with Red Cabbage Slaw & Cilantro Cream Sauce

Ingredients:

8, 6-inch corn tortillas

Shrimp-
1 & 1/2 pound, jumbo shrimp peeled and cleaned
1 tbsp garlic infused olive oil
1 tbsp tajin (or any chili lime/chili lemon seasoning)
1 tsp cumin
1 tsp paprika
1 tsp chili powder
1 tsp cajun seasoning
1 tsp garlic powder
1 tsp red chili flakes *optional*
salt to taste (do not need a lot because of the tajin)
black pepper to taste
Chopped cilantro to garnish

Slaw-
1 1/2 cups red cabbage, sliced thin (can use shredded)
1 cup carrots, sliced thin (can use shredded)
1/4 cup cilantro, minced (can use parsley, scallions or herb of choice)
1/2 jalapeno, minced *optional*

1 garlic clove, minced (can use 1/2 tsp garlic powder)
2 tbsp olive oil
2 tbsp fresh lime juice (about 1/2 a lime)
1 tbsp vinegar
1 tablespoon honey (or sugar alternative)
salt to taste
cracked black pepper to taste

Sour Cream Sauce-
1 cup sour cream (can use plain greek yogurt or non-dairy alternative)
1/4 cup cilantro, minced (can use herb of choice)
1 garlic clove, minced (can use 1/2 tsp garlic powder)
2 tbsp fresh lime juice (about 1/2 lime)
salt to taste
cracked black pepper to taste
water to thin *optional* (if using water adjust salt, pepper & lime juice)

Directions:

1. Make Slaw: Combine all slaw ingredients in a bowl and set aside to marinate.
2. Make Sauce: Combine all sour cream sauce ingredients in a bowl and set aside.
3. Cook Shrimp: Add cleaned shrimp and all spices in a bowl and mix together well. In a cast iron skillet or cast iron grill pan on medium-high heat add a drizzle of oil. When heated lay shrimp down without over crowding the pan. Cook shrimp on one side for 3 minutes, flip and cook the other side for another 3 minutes. Repeat until all shrimp is cooked through.
4. Toast Tortilla: In a dry skillet add tortillas 1 at a time and toast until crisp and slightly charred around the edges, about 1-2 minutes on each side.
5. Assemble Taco: On toasted tortilla, add blackened shrimp, red cabbage slaw and sour cream sauce. Garnish with fresh cilantro or herb, add desired hot sauce if desired. Serve and enjoy!
